- 1/2 cup yellow cornmeal
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/2 cup unsalted butter, melted and slightly cooled
- 2 large eggs
Instructions
- Preheat the air fryer to 350°F (175°C) and grease a small baking dish that fits inside the basket.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, mix buttermilk, melted butter, and eggs until combined.
- Pour wet ingredients into dry ingredients and stir just until combined; do not overmix.
- Pour batter into the prepared baking dish and smooth the top.
- Place in the air fryer basket and cook for about 20 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool slightly before slicing and serving.
Notes
- Do not overmix the batter to keep the cornbread light and fluffy.
- Check doneness early to avoid overcooking and dryness.
- You can substitute buttermilk with milk + lemon juice or vinegar.
- Add cheese, jalapeños, or corn for a savory variation.
- Reduce sugar for a more savory cornbread version.
