Ami’s Cardamom Sugar Cookies are soft, buttery cookies infused with warm aromatic cardamom and coated in delicate sugar for a lightly crisp exterior and tender center.

  • Total Time: 28 minutes
  • Yield: 18 cookies

Ingredients

  • 1 stick (113g) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 tablespoons granulated sugar, for rolling
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 2 tablespoons finely chopped pistachios, optional
  • 1 tablespoon crushed dried rose petals, optional

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter and 3/4 cup sugar until light and fluffy, about 2 to 4 minutes.
  3. Add the egg and vanilla extract and mix until smooth and fully combined.
  4. Add the flour, baking powder, cardamom, and salt. Mix on low speed just until a soft dough forms.
  5. Scoop about 1 1/2 tablespoons of dough and roll into smooth balls.
  6. Roll each dough ball in the remaining sugar until coated.
  7. Arrange the dough balls on the prepared baking sheets about 2 to 3 inches apart.
  8. Gently flatten each dough ball to about 1/2-inch thickness.
  9. Sprinkle with chopped pistachios or crushed rose petals if desired.
  10. Bake for 8 to 10 minutes until the edges are lightly set and the centers remain soft.
  11. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Avoid overmixing the dough to keep the cookies tender.
  • Cinnamon or nutmeg can replace cardamom if preferred.
  • Orange zest adds a bright citrus flavor variation.
  • Coarse sugar creates extra crunch and sparkle.
  • Dip cooled cookies in melted dark chocolate for a richer dessert.
  • Store in an airtight container at room temperature for up to 3 days.
  • Freeze baked cookies or unbaked dough balls for up to 2 months.
  • Warm cookies briefly in the microwave for a freshly baked texture.
