Ingredients
- 2 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/4 cup milk
- 1 teaspoon vanilla extract

- 1 cup peach jam or preserves
- 1/2 cup finely crushed cookies or cake crumbs
- 2 tablespoons milk (for filling)
- 1/2 cup granulated sugar (for coating)
- yellow and red food coloring
- fresh mint leaves (optional)
Instructions
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Mix in milk and vanilla extract.
- In a separate bowl, combine flour, baking powder, and salt.
- Gradually add dry ingredients to wet mixture to form a soft dough.
- Cover and rest dough for 20 minutes.
- Preheat oven to 180°C (350°F) and line baking sheet.
- Roll dough into small balls and place on baking sheet.
- Bake 12–15 minutes until bottoms are lightly golden.
- Cool completely.
- Mix peach jam, crumbs, and milk to make filling.
- Scoop a small cavity from each cookie base.
- Fill cookies and sandwich two together to form a peach shape.
- Lightly brush with water or coloring, then roll in sugar.
- Decorate with red and yellow coloring and mint leaves if desired.
Notes
- Do not overbake to keep cookies soft.
- Chill dough if too sticky to handle.
- Use natural fruit coloring for a more natural look.
- Cookies taste better after resting a few hours once assembled.
- Store unfilled cookies separately for longer freshness.
