Ingredients

  • 1 scoop unflavored or vanilla whey protein isolate
  • 1/4 cup cold water (for protein slurry)
  • 1–2 drops liquid stevia (optional)
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Pour 1/4 cup cold water into a small bowl and sprinkle gelatin evenly over the surface.
  2. Allow gelatin to bloom for 5 minutes until sponge-like.
  3. In a saucepan, gently heat apple juice and orange juice until hot but not boiling.
  4. Pour hot juice mixture into the bloomed gelatin and stir until fully dissolved.
  5. In a separate bowl or shaker, combine whey protein isolate with remaining 1/4 cup cold water until smooth.
  6. Let gelatin mixture cool for 2–3 minutes.
  7. Slowly whisk the protein slurry into the gelatin mixture until fully combined.
  8. Stir in optional stevia and lemon juice.
  9. Pour mixture into a standard 12-cup muffin tin or silicone molds.
  10. Refrigerate for 2–3 hours until fully set.
  11. Carefully loosen edges and serve chilled.
