- 2 boneless, skinless chicken breasts
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- 1 teaspoon honey
- 4 cups mixed salad greens
- 1 cup fresh blackberries
- 1/4 cup sliced cucumber
- 1/4 cup thinly sliced red onion
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped walnuts or almonds
Instructions
- Season chicken breasts with salt and black pepper.
- Whisk balsamic vinegar, olive oil, and honey, then brush half over the chicken and marinate for 15 minutes.
- Preheat grill or grill pan over medium heat.
- Grill chicken for 5–6 minutes per side until fully cooked (75°C internal temperature).
- Remove chicken and let rest, then slice into strips.
- In a bowl, combine salad greens, blackberries, cucumber, and red onion.
- Add sliced chicken on top of the salad.
- Drizzle remaining dressing over the salad.
- Sprinkle feta cheese and nuts on top.
- Serve immediately.
