A simple technique that transforms budget-friendly steak cuts like sirloin or London broil into tender, juicy, steakhouse-style meals using a dry brine and savory Worcestershire seasoning.

  • Total Time: 24 hours 25 minutes
  • Yield: 4 servings

Ingredients

  • 2 pounds sirloin steak or London broil
  • 2 tablespoons coarse kosher salt
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon olive oil
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika

Instructions

  1. Pat the steak dry with paper towels and place it on a tray or plate.
  2. Sprinkle coarse kosher salt evenly over all sides of the steak.
  3. Refrigerate uncovered for 24 hours to dry brine the meat.
  4. Remove the steak from the refrigerator 30 minutes before cooking.
  5. Brush both sides lightly with Worcestershire sauce.
  6. Season with black pepper, garlic powder, and smoked paprika.
  7. Heat a grill, cast iron skillet, or flat-top grill over high heat until very hot.
  8. Brush the steak lightly with olive oil.
  9. Cook for 4 to 6 minutes per side for medium-rare, depending on thickness.
  10. Use a meat thermometer and cook to an internal temperature of 130°F to 135°F for medium-rare.
  11. Remove from heat and rest for 5 to 10 minutes.
  12. Slice thinly against the grain before serving.

Notes

  • Dry brining overnight improves tenderness and flavor.
  • Slice against the grain for the most tender texture.
  • London broil benefits especially well from thin slicing.
  • Add butter after cooking for extra richness.
  • Store leftovers in the refrigerator for up to 4 days.
  • Freeze cooked steak for up to 3 months in a freezer-safe bag.
  • Reheat gently over low heat to avoid drying out the meat.
