Fresh pineapple spears brushed with a buttery brown sugar cinnamon glaze and grilled until caramelized, creating a sweet, smoky, and tropical dessert or side dish.

  • Total Time: 25 minutes
  • Yield: 4 to 6 servings

Ingredients

  • 1 fresh pineapple, peeled, cored, and cut into spears
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Nonstick cooking spray or oil for the grill

Instructions

  1. Preheat the grill to medium heat and lightly oil the grill grates or spray with nonstick cooking spray.
  2. Cut off the top and bottom of the pineapple, remove the skin and core, and slice into long spears.
  3. In a bowl, whisk together melted butter, brown sugar, cinnamon, vanilla extract, and salt until smooth.
  4. Brush the pineapple spears generously with the glaze on all sides.
  5. Place the pineapple on the grill and cook for 3 to 4 minutes per side.
  6. Continue brushing with glaze while grilling to help the sugars caramelize.
  7. Grill until the pineapple has golden grill marks, caramelized edges, and a tender texture.
  8. Remove from the grill and spoon any remaining glaze over the top.
  9. Serve warm as a dessert, side dish, or topping for ice cream, yogurt, or pancakes.

Notes

  • Fresh pineapple works best for grilling and caramelization.
  • A grill pan can be used indoors if an outdoor grill is unavailable.
  • Dark brown sugar gives a richer caramel flavor.
  • For a dairy-free version, replace butter with coconut oil or dairy-free butter.
  • Leftovers are delicious in smoothies, yogurt bowls, or fruit salads.
