Ingredients
- 1 oz gin
- 1 oz fresh carrot juice
- 0.75 oz fresh lemon juice
- 0.75 oz honey syrup
- 3–4 oz Prosecco
- Ice cubes
- 1 carrot bunch with stems (for garnish)
- 1 lemon, sliced into wheels (for garnish)
- For honey syrup: 1/2 cup honey
- 1/2 cup warm water
Instructions
- Prepare honey syrup by mixing honey and warm water until smooth, then let cool.
- Wash carrots, reserve tops, and shave ribbons from one or two carrots for garnish.
- Squeeze lemon juice and slice remaining lemon into wheels.
- In a shaker, combine gin, carrot juice, lemon juice, and honey syrup.
- Add ice and shake for 10–12 seconds until chilled.
- Fill a wine glass with ice and strain the mixture into it.
- Top with Prosecco and gently stir.
- Garnish with lemon wheel, carrot ribbon, and carrot tops.
- Serve immediately.

- Use fresh carrot juice for best flavor.
- Add Prosecco just before serving to maintain carbonation.
- Adjust honey syrup for desired sweetness.
- Chill all ingredients beforehand for best results.
