Soft, juicy Chicken Irani Kababs made with minced chicken, creamy yogurt marinade, and aromatic spices, grilled until tender and optionally infused with smoky charcoal flavor.

Ingredients

  • 500 g chicken mince
  • 120 g thick yogurt
  • 1 tablespoon ginger garlic paste
  • 2 green chilies, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons cornflour
  • 2 tablespoons fresh coriander leaves, finely chopped
  • 1 tablespoon cooking oil or melted butter for brushing
  • 1 small piece charcoal (optional)
  • 1 teaspoon oil or ghee (for charcoal smoke, optional)

Instructions

  1. In a large mixing bowl combine chicken mince and thick yogurt and mix gently.
  2. Add ginger garlic paste, chopped green chilies, cumin, coriander, paprika, salt, and black pepper. Mix thoroughly.
  3. Add lemon juice, cornflour, and chopped coriander leaves and mix until the mixture becomes slightly sticky.
  4. Cover and refrigerate for at least 30 minutes to marinate (up to 2 hours for deeper flavor).
  5. Lightly oil your hands and shape the mixture onto skewers to form long kababs or shape into oval patties.
  6. Preheat a grill pan, barbecue grill, or skillet over medium heat.
  7. Cook the kababs for about 10–12 minutes, turning occasionally so they cook evenly.
  8. Brush lightly with oil or melted butter during cooking.
  9. For optional charcoal smoke, heat a small charcoal piece until red hot and place it in a small foil cup in the pan with the cooked kababs.
  10. Pour 1 teaspoon oil or ghee over the charcoal and immediately cover the pan with a lid.
  11. Allow the smoke to infuse for 3–5 minutes, then remove the charcoal.
  12. Serve the kababs hot.

Notes

  • Marinating longer enhances the flavor and tenderness.
  • If the mixture feels too wet, add a little extra cornflour to help bind it.
  • You can bake the kababs at 200°C for 15–18 minutes if you prefer not to grill.
  • Add chopped mint for a fresh herbal flavor.
  • Serve with flatbread, rice, salad, or yogurt-based sauces.
