A refreshing no-bake dessert featuring a buttery graham cracker crust, a light and creamy cheesecake-style filling, and a sweet-tart cherry topping.

  • Total Time: 4 hours 20 minutes
  • Yield: 9 servings

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 container (8 oz) whipped topping
  • 1 can (21 oz) cherry pie filling

Instructions

  1. In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until well combined and crumbly.
  2. Press the mixture firmly into the bottom of a square baking dish to form an even crust.
  3. Place the crust in the refrigerator to chill while preparing the filling.
  4. In a large bowl, beat the softened cream cheese until smooth and creamy.
  5. Add powdered sugar and vanilla extract, mixing until fully incorporated and lump-free.
  6. Gently fold in the whipped topping until light and airy.
  7. Spread the cream cheese mixture evenly over the chilled crust.
  8. Smooth the top with a spatula for an even layer.
  9. Spoon the cherry pie filling over the cream layer and spread evenly.
  10. Cover and refrigerate for at least 4 hours, preferably overnight, until fully set.
  11. Slice into squares and serve chilled.

Notes

  • Chill overnight for best texture and flavor.
  • Use homemade whipped cream as a substitute for whipped topping if desired.
  • Try different fruit toppings like strawberry, blueberry, or mixed berries.
  • Add lemon zest to the filling for a citrus twist.
  • Use digestive biscuits or vanilla wafers instead of graham crackers if preferred.
  • Store covered in the refrigerator for up to 3 days.
  • Avoid freezing as it may affect the texture of the filling.
  • Serve chilled and do not leave at room temperature for more than 1–2 hours.
