Instructions
- Preheat oven to 180°C (350°F) and line a 9×13-inch pan with parchment paper.
- Mix graham cracker crumbs, melted butter, and sugar until combined.
- Press mixture firmly into the pan to form a crust and bake for 8–10 minutes. Let cool slightly.
- Beat cream cheese until smooth, then add sugar and mix well.
- Add eggs one at a time, mixing after each addition.
- Stir in vanilla extract and sour cream until smooth.
- Pour filling over crust and spread evenly.
- Bake for 30–35 minutes until edges are set and center slightly jiggles.
- Cool at room temperature for 1 hour, then refrigerate for at least 3 hours.
- Spread caramel sauce over chilled cheesecake and sprinkle with sea salt if desired.
- Slice into bars and serve chilled.
