Ingredients
- 2 cups whole milk (500 ml)
- 1/2 cup heavy cream (120 ml)
- 1/4 cup cocoa powder (25 g)
- 1/2 cup sugar (100 g)
- 1 tablespoon cornstarch (8 g)
- 100 g dark chocolate, chopped
- 1 teaspoon vanilla extract (5 ml)
- A pinch of salt
Instructions
- In a saucepan, whisk together milk, cream, cocoa powder, sugar, cornstarch, and salt until smooth.
- Place over medium heat and cook, whisking frequently, until the mixture warms and slightly thickens.
- Add chopped dark chocolate and stir until fully melted and smooth.
- Remove from heat and stir in vanilla extract.
- Let the mixture cool for 10–15 minutes, stirring occasionally.
- Pour into popsicle molds and insert sticks.
- Freeze for at least 6 hours or until completely firm.
- Run molds under warm water briefly to release popsicles before serving.
