Ingredients
- 2 cups masa harina
- 1 1/2 cups warm water
- 1 teaspoon salt
- 2 tablespoons vegetable oil
- 1 cup queso fresco, crumbled
- 1 cup mozzarella cheese, shredded
- 1 cup refried beans
- 1 cup cooked ground meat or shredded chicken
- 1 small onion, finely chopped
- 1 clove garlic, minced
- Optional: curtido (cabbage slaw)
Instructions
- In a large bowl, mix masa harina and salt. Gradually add warm water, mixing until a soft, smooth dough forms. Let rest for 10 minutes.
- Prepare fillings by mixing cheeses together. In a pan, sauté onion and garlic, then add cooked meat and season lightly. Mash beans until smooth if using.
- Divide dough into 8 equal portions and roll into balls.
- Flatten each ball into a disc, add about 2 tablespoons of filling, then fold edges over to seal.
- Gently flatten again into a round disc about 1/2 inch thick.
- Heat oil in a skillet over medium heat.
- Cook each pupusa for 4–5 minutes per side until golden brown and crispy.
- Remove and let rest briefly before serving.
- Serve warm with curtido or sauce if desired.
Notes
- Keep hands slightly damp to prevent sticking.
- If dough cracks, add a bit more water.
- Do not overfill to avoid breaking.
- Use masa harina for authentic texture.
- Best served fresh and hot.
