Ingredients
- For the Salmon Bites:
- 1 1/2 pounds salmon fillets, skin removed, cut into bite-sized pieces

- For the Bang Bang Sauce:
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha sauce
- 1 teaspoon honey
- 1 teaspoon rice vinegar
- 1/2 teaspoon garlic powder
- Optional Garnish:
- Chopped green onions
- Sesame seeds
Instructions
- Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Pat salmon dry and place in a bowl. Drizzle with olive oil and season with salt and pepper.
- Sprinkle cornstarch over salmon and toss until evenly coated.
- Arrange salmon pieces on baking sheet without overcrowding.
- Bake for 12–15 minutes, flipping halfway, until golden and cooked through.
- In a bowl, mix mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, and garlic powder until smooth.
- Remove salmon from oven and let cool slightly.
- Toss salmon in the sauce or drizzle sauce over the top.
- Garnish with green onions and sesame seeds if desired and serve immediately.
