Ingredients
- 1 pound ground beef
- 1 tablespoon vegetable oil
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt (plus more to taste)
- 1/4 teaspoon black pepper
- 1 (15 oz) can pinto beans, drained and rinsed
- 1/2 cup tomato sauce
- 1/4 cup water
- 1 1/2 cups shredded cheddar cheese
- 6 large flour tortillas
- Hot sauce (optional)
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add onion and cook for 3–4 minutes until softened, then stir in garlic and cook for 30 seconds.
- Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Stir in chili powder, cumin, smoked paprika, salt, and black pepper.
- Add pinto beans, tomato sauce, and water, then simmer for 8–10 minutes until slightly thickened.
- Warm tortillas until soft and pliable.
- Spoon filling into each tortilla and top with shredded cheese.
- Fold sides inward and roll tightly into burritos.
- Serve immediately or wrap for storage.
Notes
- Let filling cool slightly before assembling to prevent soggy tortillas.
- Ground turkey or chicken can be used instead of beef.
- Cooked rice can be added for extra bulk.
- Adjust spices or add jalapeños for more heat.
- Cheddar, Monterey Jack, or a blend works best for melting.
