- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar

- 1/3 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon baking powder
- 1/4 teaspoon salt, for filling
- Extra powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
- In a large bowl, cream together softened butter and powdered sugar until smooth.
- Add flour and salt, mixing until a soft dough forms.
- Press the dough evenly into the prepared baking pan.
- Bake the crust for 18 to 20 minutes, or until lightly golden around the edges.
- While the crust bakes, whisk together eggs and granulated sugar until smooth.
- Add flour, lemon juice, lemon zest, baking powder, and salt. Whisk until fully combined.
- Pour the lemon filling over the warm baked crust.
- Return the pan to the oven and bake for 20 to 25 minutes, or until the center is set.
- Cool completely, then refrigerate for at least 2 hours before slicing.
- Dust with powdered sugar before serving.
