- 2 eggs

- 1 packet baking powder (about 10 grams)
- Zest of 1 lemon or a few drops lemon flavoring (optional)
- 350 to 400 grams all-purpose flour (about 2 3/4 to 3 1/4 cups)
Instructions
- In a bowl, whisk eggs, salt, and sugar until pale and slightly frothy.
- Add oil and vanilla extract, mixing well.
- Incorporate lemon zest if using.
- Add cornstarch and baking powder, stirring to combine.
- Gradually add flour until a soft, non-sticky dough forms.
- Knead gently until smooth.
- Preheat oven to 180°C (350°F) and line a baking tray.
- Shape dough into small balls and flatten using a stamp or fork.
- Place on tray with slight spacing.
- Bake for 12–15 minutes until bottoms are lightly golden.
- Cool completely before serving.
Notes
- Do not over-add flour to keep cookies soft.
- Cookies should remain pale on top.
- Use orange zest for variation.
- Dust with powdered sugar for presentation.
- Store in airtight container for freshness.
- Freeze for up to 2 months if needed.
