Instructions
- Rinse the rice thoroughly under cold water until the water runs clear.
- Heat olive oil in a large saucepan over medium heat.
- Add the diced onion and sauté for 3 to 4 minutes until softened.
- Stir in the minced garlic and cook for 30 seconds until fragrant.
- Add the rinsed rice and stir continuously for 1 to 2 minutes to lightly toast it.
- Pour in the broth and add lemon juice, lemon zest, salt, and black pepper.
- Bring the mixture to a gentle boil.
- Reduce the heat to low, cover the saucepan, and simmer for 15 to 20 minutes until the rice is tender and the liquid is absorbed.
- Remove from the heat and let the rice rest, covered, for 5 minutes.
- Fluff the rice with a fork and stir in the chopped parsley or dill.
- Serve warm with optional lemon wedges and extra herbs.
