Ingredients

  • 2 cups plain mashed potatoes (cooled)

Instructions

  1. Place mashed potatoes in a large bowl and let them come to room temperature if cold.
  2. Add salt and mix gently until evenly combined.
  3. Gradually add flour, starting with 1 1/2 cups, mixing until a soft dough forms.
  4. Add more flour as needed until the dough is soft and manageable but not sticky.
  5. Transfer dough to a lightly floured surface and gently bring it together without overworking.
  6. Shape into a round about 1 inch thick and cut into four wedges.
  7. Heat a skillet over medium heat and lightly grease with butter or oil.
  8. Cook wedges for 3–4 minutes per side until golden brown and cooked through.
