Ingredients

  • 1 lb ground beef
  • 1 lb ground lamb
  • 2 tablespoons butter
  • 2 large eggs
  • 1/2 cup milk
  • 2 tablespoons lemon juice
  • 1 cup panko breadcrumbs
  • 1 medium onion, finely chopped
  • 6 cloves garlic, minced
  • 4 teaspoons kosher salt
  • 2 teaspoons black pepper
  • 2 teaspoons dried oregano
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 2 teaspoons ground cumin
  • 1 teaspoon dried marjoram (optional)
  • 1 cup tzatziki sauce
  • 1 large red onion, thinly sliced
  • 24 tomatoes, sliced
  • 12 cucumbers, sliced
  • 810 pita breads
  • 2 tablespoons fresh dill, chopped (optional)

Instructions

  1. Prepare tzatziki sauce and refrigerate to chill.
  2. Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.
  3. Finely chop onion and garlic.
  4. In a large bowl, combine beef, lamb, butter, eggs, milk, lemon juice, breadcrumbs, onion, garlic, salt, pepper, and spices.
  5. Mix gently until just combined.
  6. Shape mixture into about 10 oval patties and place on baking sheet.
  7. Bake for 15–20 minutes until cooked through.
  8. Warm pita bread and prepare sliced vegetables.
  9. Spread tzatziki on pita, add sliced gyro meat, and top with vegetables and dill.
  10. Fold and serve immediately.

  • Avoid overmixing to keep meat tender.
  • Lamb adds authentic flavor but can be substituted with beef.
