Ingredients

  • 2.5 pounds stew meat or beef tips
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 large sweet onion, diced into 1-inch pieces
  • 4 garlic cloves, minced
  • 2 1/2 cups low-sodium beef broth
  • 1/4 cup Worcestershire sauce
  • 2 sprigs fresh thyme
  • 1 whole bay leaf
  • 3 tablespoons cornstarch
  • 3 tablespoons cold water

Instructions

  1. Pat the beef dry with paper towels and season all sides with salt and black pepper.
  2. Turn the Instant Pot to sauté mode and heat the olive oil.
  3. Add one-third of the beef in a single layer and sear for about 3 minutes until browned. Remove and repeat with the remaining beef.
  4. Add the butter to the pot, then stir in the onion and garlic. Cook for 1 minute until fragrant.
  5. Pour in 1/2 cup beef broth and scrape the bottom of the pot with a wooden spoon to loosen browned bits.
  6. Return the beef and any juices to the Instant Pot.
  7. Add the remaining beef broth, Worcestershire sauce, thyme sprigs, and bay leaf. Stir gently.
  8. Seal the lid and cook on High Pressure for 25 minutes.
  9. Allow a natural pressure release for 15 minutes, then carefully release any remaining pressure.
  10. Whisk together the cornstarch and cold water in a small bowl until smooth.
  11. Remove the thyme stems and bay leaf from the pot.
  12. Turn the Instant Pot back to sauté mode and stir in the cornstarch slurry.
  13. Simmer for 5 to 15 minutes until the gravy thickens.
  14. Taste and adjust seasoning if needed.
  15. Serve hot over mashed potatoes, noodles, rice, or polenta.
