These Instant Pot Stuffed Shells are creamy, cheesy, and loaded with comforting Italian-inspired flavor. Jumbo pasta shells are filled with a rich ricotta cheese mixture, topped with marinara sauce and melted mozzarella, then cooked quickly in the Instant Pot for an easy family-friendly dinner.

Ingredients

  • 15 ounces ricotta cheese
  • 2 cups mozzarella cheese, divided
  • 1/2 cup parmesan cheese, shredded
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 teaspoon kosher salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1/4 cup fresh parsley, chopped
  • 12 ounces jumbo pasta shells, uncooked
  • 24 ounces marinara sauce
  • 1 1/2 cups water
  • Nonstick cooking spray

Instructions

  1. In a large bowl, combine the ricotta cheese, 1 cup mozzarella cheese, parmesan cheese, egg, garlic, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and parsley. Mix until smooth and fully combined.
  2. Transfer the cheese mixture into a gallon-size plastic bag and snip off a small corner to create a piping bag.
  3. Lightly spray the Instant Pot insert with nonstick cooking spray.
  4. Fill each uncooked jumbo shell with the ricotta mixture and arrange them inside the Instant Pot in a mostly single layer.
  5. Pour the water around the shells and sprinkle with the remaining salt and black pepper.
  6. Spoon the marinara sauce evenly over the stuffed shells without stirring.
  7. Close the Instant Pot lid and set the valve to sealing.
  8. Cook on High Pressure for 8 minutes.
  9. Carefully perform a Quick Pressure Release once cooking is complete.
  10. Sprinkle the remaining 1 cup mozzarella cheese over the hot shells and cover with the lid for a few minutes until melted.
  11. Allow the shells to rest for about 5 minutes before serving.

  • Do not stir the sauce after adding it to avoid triggering the Instant Pot burn notice.
  • Let the shells rest before serving so the filling can set properly.
  • Use a thick marinara sauce for the best texture and flavor.
