Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 cups apples, peeled and diced
  • 1 teaspoon ground cinnamon
  • 1/2 cup raisins (optional)
  • 2 cups whole milk (for custard)
  • 4 large egg yolks
  • 1/3 cup granulated sugar (for custard)
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract (for custard)
  • Pinch of salt (for custard)

Instructions

  1. Heat milk in a saucepan until gently simmering.
  2. In a bowl, whisk egg yolks, sugar, cornstarch, and salt.
  3. Slowly add hot milk to the egg mixture while whisking, then return to saucepan.
  4. Cook over medium-low heat, stirring until thickened. Remove from heat and stir in vanilla. Set aside.
  5. Preheat oven to 175°C (350°F) and grease a 9-inch cake pan.
  6. Whisk flour, baking powder, baking soda, and salt in a bowl.
  7. Cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
  8. Alternate adding dry ingredients and milk, mixing until just combined.
  9. Fold in apples, cinnamon, and raisins.
  10. Pour batter into pan and bake for 40–45 minutes until a toothpick comes out clean.
  11. Cool slightly and serve warm with custard sauce.
