- 1 can (15 ounces) chickpeas, drained and rinsed

- For the dressing:
- 1/4 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 3 tablespoons grated parmesan cheese
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- 1 1/2 teaspoons Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain and let cool slightly.
- Preheat the oven to 400°F (200°C).
- Drain, rinse, and thoroughly dry the chickpeas. Remove loose skins if desired.
- Toss the chickpeas with olive oil, paprika, garlic powder, onion powder, and salt.
- Spread the chickpeas on a parchment-lined baking sheet and roast for about 30 minutes, stirring halfway through, until crispy.
- Remove the kale stems and chop the leaves into bite-sized pieces. Wash and dry thoroughly.
- Massage the kale gently with your hands for 1 to 2 minutes until softened.
- In a small bowl, whisk together the mayonnaise, Greek yogurt, parmesan cheese, lemon juice, garlic, Dijon mustard, salt, and black pepper until smooth.
- In a large serving bowl, combine the kale, cooked pasta, roasted chickpeas, and parmesan cheese.
- Pour the dressing over the salad and toss until evenly coated.
- Serve immediately or chill slightly before serving.
