Kenyan Beef Wet Fry is a comforting East African beef dish made with tender strips of beef simmered in a rich tomato sauce flavored with garlic, ginger, garam masala, and fresh herbs for a hearty and satisfying meal.

Ingredients

  • 3 tablespoons extra-virgin olive oil or avocado oil
  • 1 pound beef sirloin, sliced into thin strips
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 small red onion, finely chopped
  • 1/2 green bell pepper, finely chopped
  • 2 teaspoons garam masala
  • 1/2 tablespoon freshly grated garlic
  • 1/2 tablespoon freshly grated ginger
  • 1 tablespoon tomato paste
  • 4 medium Roma tomatoes, finely chopped
  • 2 tablespoons chopped fresh cilantro
  • Cooked white rice or ugali, for serving

Instructions

  1. Heat 1 tablespoon oil in a large skillet over high heat.
  2. Add half of the sliced beef in a single layer and season lightly with salt and pepper.
  3. Cook undisturbed for 1 minute, then stir and continue cooking for 2 to 4 minutes until browned. Transfer to a bowl.
  4. Repeat with another tablespoon of oil and the remaining beef.
  5. Reduce heat to medium and add the remaining oil if needed.
  6. Add the onion and green bell pepper. Cook for about 3 minutes until softened.
  7. Stir in the garam masala, garlic, and ginger. Cook for 1 minute until fragrant.
  8. Add the tomato paste and cook for another minute until slightly darkened.
  9. Mix in the chopped tomatoes and cook for 7 to 8 minutes until thickened into a rich sauce.
  10. Return the cooked beef and juices to the skillet and stir well to coat in the sauce.
  11. Simmer for 1 to 2 minutes until heated through.
  12. Sprinkle with fresh cilantro and serve hot with rice or ugali.

  • Sirloin beef cooks quickly and stays tender, making it ideal for this recipe.
  • Avoid overcrowding the pan when browning the beef to achieve better caramelization.
