Ingredients

  • 2 cups finely grated zucchini (excess moisture squeezed out)
  • 2 cups almond flour
  • 1/3 cup coconut flour
  • 1/2 cup granulated erythritol or keto sweetener
  • 1/4 cup brown sugar substitute
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter (for frosting)
  • 2/3 cup brown sugar substitute (for frosting)
  • 1/3 cup heavy cream
  • 1 teaspoon vanilla extract (for frosting)
  • 1 cup powdered erythritol

Instructions

  1. Preheat oven to 175°C (350°F) and line a baking pan with parchment paper.
  2. Grate zucchini finely and squeeze out excess moisture using a towel.
  3. In a bowl, mix almond flour, coconut flour, sweeteners, baking powder, baking soda, cinnamon, and salt.
  4. In another bowl, whisk eggs, melted butter, almond milk, and vanilla extract.
  5. Combine wet and dry ingredients, then fold in zucchini to form a thick batter.
  6. Spread batter evenly in prepared pan and bake for 25–30 minutes until a toothpick comes out clean.
  7. Allow bars to cool completely.
  8. For frosting, melt butter in a saucepan, add brown sugar substitute, and cook until dissolved.
  9. Add heavy cream and simmer gently, then remove from heat and stir in vanilla.
  10. Whisk in powdered erythritol until smooth and spreadable.
  11. Spread frosting over cooled bars and let it set before slicing.
