Instructions
- Clean and pat dry chicken wings, then marinate in buttermilk and salt for at least 30 minutes.
- Mix flour, cornstarch, and salt in a bowl.
- Remove wings from marinade and coat evenly in the flour mixture.
- Heat oil in a deep pan over medium-high heat.
- Fry wings in batches for 8–10 minutes until golden and crispy.
- Remove and drain on paper towels.
- In a saucepan, melt butter over low heat.
- Add salt, black pepper, garlic powder, onion powder, citric acid, lemon zest, and lemon juice.
- Stir and simmer briefly to combine flavors.
- Toss fried wings in the warm lemon pepper sauce until evenly coated.
- Serve immediately while hot and crispy.
