Ingredients
- 1 1/2 cups fresh or frozen mixed berries
- 8 tablespoons raw honey, divided
- 2 tablespoons chia seeds
- 3 cups cottage cheese
- 1 tablespoon pure vanilla extract
- Fresh berries, optional topping
- Dark chocolate shavings, optional topping
- Granola, optional topping
- Lemon zest, optional topping
- Nut butter drizzle, optional topping
Instructions
- Add the mixed berries, 2 tablespoons of honey, and chia seeds to a high-speed blender. Blend until mostly smooth and thick like jam.
- Divide the berry mixture evenly among 4 serving jars or dessert cups.
- Rinse the blender, then add the cottage cheese, remaining 6 tablespoons of honey, and vanilla extract.
- Blend until smooth and creamy, scraping down the sides as needed. Avoid over-blending.
- Spoon the cottage cheese mixture evenly over the berry layer in each cup.
- Cover the cups and refrigerate for at least 1 hour or overnight for best texture.
- Add optional toppings before serving and enjoy chilled.
Notes
- Frozen berries work very well and help create a thicker berry layer.
- Full-fat cottage cheese creates the creamiest cheesecake texture.
- Maple syrup can replace honey if preferred.
- Blend slowly and scrape the blender sides for the smoothest filling.
- Vanilla protein powder can be added for extra protein.
- Store covered in the refrigerator for up to 24 hours.
- Freezing is not recommended because the texture may become grainy.
