Ingredients

  • 1 tablespoon monk fruit sweetener, for chocolate swirl
  • 2 tablespoons heavy cream, for chocolate swirl
  • Sugar-free chocolate chips, optional
  • Chopped nuts, optional
  • Unsweetened coconut flakes, optional

Instructions

  1. In a large bowl, whip the heavy whipping cream with a hand mixer until soft peaks form.
  2. In a separate bowl, stir together the Greek yogurt, monk fruit sweetener, and vanilla extract until smooth.
  3. Gently fold the yogurt mixture into the whipped cream using a spatula.
  4. In a small bowl, combine cocoa powder, monk fruit sweetener, and heavy cream to make the chocolate swirl.
  5. Pour half of the vanilla mixture into a freezer-safe loaf pan or container.
