Ingredients

  • 1 ½ pounds ripe peaches, peeled and diced
  • ½ cup honey
  • ¼ cup granulated sugar
  • 2 to 3 tablespoons sriracha sauce
  • 2 tablespoons lemon juice
  • ¼ teaspoon salt

Instructions

  1. Place diced peaches, honey, sugar, and lemon juice into a medium saucepan over medium heat.
  2. Stir until the sugar dissolves and the mixture begins to bubble.
  3. Simmer for about 20 minutes, stirring often, until the peaches soften and break down.
  4. Stir in sriracha and salt, adjusting the heat to taste.
  5. Continue cooking for another 10 minutes, stirring frequently, until the jam is thick and glossy.
  6. Remove from heat once it coats the back of a spoon, and let cool.
  7. Transfer to a clean jar and refrigerate until ready to use.
