Instructions
- Place diced peaches, honey, sugar, and lemon juice into a medium saucepan over medium heat.
- Stir until the sugar dissolves and the mixture begins to bubble.
- Simmer for about 20 minutes, stirring often, until the peaches soften and break down.
- Stir in sriracha and salt, adjusting the heat to taste.
- Continue cooking for another 10 minutes, stirring frequently, until the jam is thick and glossy.
- Remove from heat once it coats the back of a spoon, and let cool.
- Transfer to a clean jar and refrigerate until ready to use.
Notes
- Add ground ginger for extra warmth.
- Swap sriracha with red chili flakes for a different type of heat.
- Use maple syrup in place of some honey for deeper sweetness.
- Frozen peaches can be used if thawed and drained first.
- No pectin needed—natural thickening occurs through cooking.
