Creamy no-bake peanut butter protein balls coated in rich dark chocolate for a satisfying high-protein snack or healthy dessert made with simple wholesome ingredients.

  • Total Time: 35 minutes
  • Yield: 15 protein balls

Ingredients

  • 1 cup cottage cheese
  • 1 cup vanilla protein powder
  • 1/2 cup natural peanut butter
  • 1 cup stevia-sweetened dark chocolate chips
  • 1 tablespoon coconut oil
  • Cooking spray, for scooping
  • Parchment paper, for lining tray

Instructions

  1. Add the cottage cheese, vanilla protein powder, and peanut butter to a food processor.
  2. Blend until the mixture becomes completely smooth and creamy, scraping down the sides as needed.
  3. Line a tray or baking sheet with parchment paper.
  4. Lightly spray a small cookie scoop with cooking spray.
  5. Scoop the mixture into evenly sized balls and place them onto the prepared tray.
  6. Transfer the tray to the freezer for at least 20 minutes until the balls are firm.
  7. Place the dark chocolate chips and coconut oil into a microwave-safe bowl.
  8. Heat gently in 15-second intervals, stirring between each interval, until smooth and melted.
  9. Using a fork, dip each chilled protein ball into the melted chocolate until fully coated.
  10. Allow excess chocolate to drip off, then place the coated balls back onto the parchment-lined tray.
  11. Refrigerate until the chocolate coating hardens completely.
  12. Serve chilled and enjoy.

Notes

  • Natural peanut butter gives the best smooth texture and flavor.
  • Different protein powders absorb moisture differently, so adjust with extra protein powder if needed.
  • Chocolate protein powder can be used for a richer flavor.
  • Store the protein balls chilled to maintain their texture.
  • Freeze for up to 1 month in an airtight container.
  • Allow frozen protein balls to soften for about 5 minutes before serving.
  • Mini chocolate chips, chia seeds, or crushed nuts can be added for extra texture.
  • These protein balls are naturally gluten-free and grain-free.
