Instructions
- Cook the rotini pasta according to package instructions until al dente.
- Drain and rinse the pasta under cold water to cool completely.
- In a large bowl, combine the cooled pasta with cherry tomatoes, red bell pepper, green bell pepper, red onion, black olives, and cucumber.
- Toss gently to distribute the vegetables evenly.
- In a separate bowl, whisk together mayonnaise, Catalina dressing, apple cider vinegar, sugar, garlic powder, onion powder, salt, and black pepper until smooth and creamy.
- Pour the dressing over the pasta mixture and stir until evenly coated.
- If using, fold in cooked shrimp or shredded cheddar cheese.
- Cover and refrigerate for at least 1 hour to allow flavors to blend.
- Stir before serving and adjust seasoning if needed.
