Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup warm milk
  • 2 egg yolks
  • 1/4 cup granulated sugar
  • 1 teaspoon active dry yeast
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 1 cup poppy seeds
  • 1/2 cup milk
  • 1/3 cup sugar
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract
  • 1/4 cup finely chopped walnuts or almonds
  • 2 tablespoons raisins
  • 1 egg white (for brushing)

Instructions

  1. Activate yeast by mixing warm milk, yeast, and a teaspoon of sugar. Let sit for 10 minutes until frothy.
  2. In a bowl, combine flour, remaining sugar, and salt. Add egg yolks, butter, and yeast mixture. Mix into a soft dough.
  3. Knead for 8–10 minutes until smooth and elastic. Cover and let rise for 1 hour until doubled.
  4. Rinse poppy seeds and simmer with milk for 10–15 minutes. Drain and cool.
  5. Grind poppy seeds into a paste and mix with sugar, honey, vanilla, nuts, and raisins.
  6. Roll dough into a rectangle and spread filling evenly.
  7. Roll into a log, seal edges, and place seam-side down on a lined baking tray.
  8. Brush with egg white and let rest 20 minutes.
  9. Bake at 180°C (350°F) for 30–35 minutes until golden brown.
  10. Cool before slicing and serving.
