- 2 filet mignon steaks (6–8 oz each)
- Salt, to taste
- Freshly ground black pepper, to taste
- Olive oil, for searing
- 1 tablespoon unsalted butter
- 1/4 cup blue cheese crumbles
- 2 tablespoons cream cheese, softened
- 1 tablespoon sour cream
- 1 clove garlic, minced
- Fresh parsley (optional, for garnish)
Instructions
- Let the steaks sit at room temperature for 20 minutes. Season both sides with salt and pepper.
- Heat olive oil in a heavy skillet over medium-high heat. Sear steaks for 3–4 minutes per side until a golden crust forms.
- Add butter to the pan and spoon over the steaks. Remove steaks and let rest.
- In a bowl, mix blue cheese, cream cheese, sour cream, and garlic until smooth.
- Preheat the broiler. Place steaks on a baking sheet and top with the cheese mixture.
- Broil for 2–3 minutes, until topping is melted and lightly golden.
- Garnish with parsley if desired and serve immediately.

- Use a meat thermometer for accuracy—130–135°F for medium-rare.
- Cheese topping can be prepared ahead and refrigerated.
- Swap blue cheese for gorgonzola for a milder taste.
