Ingredients

  • 2 filet mignon steaks (68 oz each)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Olive oil, for searing
  • 1 tablespoon unsalted butter
  • 1/4 cup blue cheese crumbles
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon sour cream
  • 1 clove garlic, minced
  • Fresh parsley (optional, for garnish)

Instructions

  1. Let the steaks sit at room temperature for 20 minutes. Season both sides with salt and pepper.
  2. Heat olive oil in a heavy skillet over medium-high heat. Sear steaks for 3–4 minutes per side until a golden crust forms.
  3. Add butter to the pan and spoon over the steaks. Remove steaks and let rest.
  4. In a bowl, mix blue cheese, cream cheese, sour cream, and garlic until smooth.
  5. Preheat the broiler. Place steaks on a baking sheet and top with the cheese mixture.
  6. Broil for 2–3 minutes, until topping is melted and lightly golden.
  7. Garnish with parsley if desired and serve immediately.
