Ingredients

  • 1 pound skinless, boneless salmon fillets, preferably king or Atlantic salmon
  • 1 tablespoon Dijon mustard
  • 2 teaspoons finely grated lemon zest
  • 3/4 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon smoked paprika
  • 1 large egg
  • 1/2 cup finely chopped red bell pepper
  • 3 tablespoons minced shallot
  • 1 tablespoon chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup panko breadcrumbs
  • 1 tablespoon olive oil
  • 4 soft hamburger buns, lightly toasted
  • Creamy dill sauce, for serving
  • Leaf lettuce, for serving

Instructions

  1. Preheat the oven to 350°F (177°C) and line a baking sheet with parchment paper.
  2. Cut one-quarter of the salmon into chunks and place it in a food processor.
  3. Add Dijon mustard, lemon zest, salt, pepper, smoked paprika, and egg. Blend until smooth.
  4. Dice the remaining salmon into small 1/4-inch cubes.
  5. Combine the diced salmon and salmon mixture in a large bowl.
  6. Add the red bell pepper, shallot, dill, and parsley. Mix gently.
  7. Fold in the panko breadcrumbs until just combined.
  8. Cover and refrigerate the mixture for 15 minutes.
  9. Divide the mixture into 4 equal patties about 3/4 inch thick.
  10. Heat olive oil in a skillet over medium heat.
  11. Cook the patties for 2 to 3 minutes per side until lightly browned.
  12. Transfer the patties to the oven and bake for about 8 minutes until firm and opaque in the center.
  13. Rest the burgers for 3 to 5 minutes.
  14. Serve on toasted buns with lettuce and creamy dill sauce.
