This soft and fluffy strawberry banana cake is moist, fruity, and comforting with sweet ripe bananas and juicy strawberries baked into every bite. Finished with a simple vanilla glaze, this easy snack cake tastes like a delicious cross between banana bread and classic strawberry cake.

  • Total Time: 1 hour 25 minutes
  • Yield: 12 slices

Ingredients

  • 3/4 cup granulated sugar
  • 1/3 cup coconut oil, melted
  • 1/4 cup unsweetened vanilla almond milk
  • 2 teaspoons vanilla extract
  • 1 1/2 cups ripe mashed bananas (about 3 medium bananas)
  • 1 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • Pinch of salt
  • 1 heaping cup diced strawberries, fresh or frozen
  • 1 cup confectioners’ sugar
  • 2 tablespoons unsweetened vanilla almond milk
  • 1 tablespoon softened margarine

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch square baking pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together the granulated sugar, melted coconut oil, almond milk, and vanilla extract until smooth.
  3. Add the mashed bananas and stir until fully combined.
  4. Add the flour, baking powder, and salt. Mix gently until just combined without overmixing.
  5. Fold in most of the diced strawberries, reserving a small amount for the top.
  6. Pour the batter into the prepared baking pan and smooth the surface evenly.
  7. Sprinkle the remaining strawberries over the top of the batter.
  8. Bake for approximately 40 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Allow the cake to cool in the pan for at least 30 minutes.
  10. To prepare the glaze, whisk together the confectioners’ sugar, almond milk, and softened margarine until smooth.
  11. Drizzle the glaze evenly over the cooled cake.
  12. Slice and serve.

Notes

  • Frozen strawberries can be used after thawing and lightly draining excess liquid.
  • Very ripe bananas create the best sweetness and moisture.
  • Avoid overmixing the batter to keep the cake soft and fluffy.
  • The glaze is optional but adds extra sweetness and moisture.
  • Add cinnamon, nuts, or chocolate chips for extra flavor variations.
  • This cake stays moist for several days when stored properly.
  • Individual slices freeze well for quick desserts or snacks.
