Ingredients
- Pie Crust:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/4 cup cold unsalted butter
- 1/4 cup butter-flavored shortening
- 1/2 cup cold water
- Peach Filling:
- 16 oz frozen sliced peaches
- 1/2 cup granulated sugar
- 1 tablespoon light brown sugar
- 1 tablespoon unsalted butter
- 2–3 teaspoons fresh lemon juice
- 1–2 teaspoons cornstarch (if needed)
- Vanilla Glaze:
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a bowl, mix flour and salt. Cut in butter and shortening until crumbly.
- Add cold water gradually until dough forms. Shape, wrap, and chill for 30 minutes.
- In a saucepan, cook peaches, sugars, butter, and lemon juice until soft.
- Add cornstarch if needed and cook until thickened. Cool completely.
- Roll dough to 1/8-inch thickness and cut into 4–5 inch circles.
- Add filling to one half, fold, and seal edges with a fork.
- Heat oil to 175°C (350°F) and fry pies until golden brown, 2–3 minutes per side.
- Drain on paper towels.
- Whisk glaze ingredients until smooth.
- Drizzle or dip warm pies in glaze.
- Serve warm.
Notes
- Seal edges היט היט to prevent filling leakage.
- Do not overcrowd pan while frying.
- Add cinnamon or nutmeg for extra flavor.
- Can be baked instead of fried at 190°C.
- Freeze un-fried pies for later use.
- Reheat in oven for best crispness.
