Steak Diane is a classic restaurant-style steak dish featuring juicy pan-seared strip steaks topped with a rich creamy mustard sauce flavored with garlic, onions, thyme, and fresh chives.

  • Total Time: 30 minutes
  • Yield: 2 servings

Ingredients

  • 2 strip steaks, 8 ounces each
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons salted butter
  • 2 tablespoons olive oil
  • 1 small red onion, finely diced
  • 3 garlic cloves, thinly sliced
  • 1 teaspoon fresh thyme leaves
  • 1/2 cup beef broth
  • 1 cup heavy cream
  • 1 tablespoon whole-grain mustard
  • 1 tablespoon balsamic reduction
  • 3 tablespoons fresh chives, minced

Instructions

  1. Remove the steaks from the refrigerator 30 minutes before cooking to allow them to come to room temperature.
  2. Season both sides of the steaks with kosher salt and black pepper.
  3. Heat a large skillet over medium-high heat and add the butter and olive oil.
  4. Place the steaks into the hot skillet and cook for about 3 minutes on the first side without moving them.
  5. Flip the steaks and cook another 3 minutes for medium-rare, or longer for desired doneness.
  6. Transfer the steaks to a cutting board and allow them to rest.
  7. In the same skillet, add the diced onion, sliced garlic, and thyme leaves.
  8. Cook for 2 to 3 minutes until softened and fragrant.
  9. Pour in the beef broth and scrape the skillet to release browned bits.
  10. Stir in the heavy cream, whole-grain mustard, and balsamic reduction.
  11. Simmer gently for about 2 minutes until the sauce thickens slightly.
  12. Taste and adjust seasoning if needed.
  13. Slice the steaks against the grain into thin strips.
  14. Arrange on serving plates and spoon the sauce generously over the top.
  15. Garnish with freshly minced chives and serve immediately.

Notes

  • Filet mignon or ribeye can replace strip steak.
  • Shallots may be substituted for red onion for a milder flavor.
  • Add mushrooms for extra texture and savory depth.
  • Half-and-half can replace heavy cream for a lighter sauce.
  • Fresh parsley works well instead of chives.
  • Use a meat thermometer for accurate doneness.
  • Store leftovers refrigerated for up to 3 days.
  • Reheat gently with a splash of broth or cream to keep the sauce smooth.
  • Freezing is not recommended due to the cream sauce.
