- 1 pound sirloin steak, cut into bite-sized cubes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- 1 1/2 cups long-grain white rice
- 2 1/2 cups beef broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup whole milk
- 8 oz cream cheese, cubed
- 2 cups sharp cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt to taste
Instructions
- Season steak cubes with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat olive oil in a large pan over medium-high heat and sear steak for 2–3 minutes per side until browned.
- Remove steak and set aside.
- In the same pan, cook diced onion and bell pepper for 3–4 minutes until softened.
- Add minced garlic and cook for 30 seconds.
- Stir in rice and toast for 1–2 minutes.
- Add beef broth, bring to a boil, then reduce heat, cover, and simmer for 18–20 minutes.
- Meanwhile, heat milk in a saucepan and whisk in cream cheese until smooth.
- Gradually add shredded cheeses, stirring until melted.
- Stir in cumin, chili powder, and salt.
- Once rice is cooked, return steak to the pan.
- Pour queso sauce over and mix gently until combined.
- Serve warm.
