Ingredients

  • 1 pound sirloin steak, cut into bite-sized cubes

  • 1 1/2 cups long-grain white rice
  • 2 1/2 cups beef broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup whole milk
  • 8 oz cream cheese, cubed
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt to taste

Instructions

  1. Season steak cubes with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat olive oil in a large pan over medium-high heat and sear steak for 2–3 minutes per side until browned.
  3. Remove steak and set aside.
  4. In the same pan, cook diced onion and bell pepper for 3–4 minutes until softened.
  5. Add minced garlic and cook for 30 seconds.
  6. Stir in rice and toast for 1–2 minutes.
  7. Add beef broth, bring to a boil, then reduce heat, cover, and simmer for 18–20 minutes.
  8. Meanwhile, heat milk in a saucepan and whisk in cream cheese until smooth.
  9. Gradually add shredded cheeses, stirring until melted.
  10. Stir in cumin, chili powder, and salt.
  11. Once rice is cooked, return steak to the pan.
  12. Pour queso sauce over and mix gently until combined.
  13. Serve warm.
