Ingredients

  • 1 lb ribeye, sirloin, or flank steak, thinly sliced
  • 2 tablespoons olive oil

  • 2 cups beef broth
  • 1 cup queso blanco or melted Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the thinly sliced steak and cook for 3 to 4 minutes until browned and fully cooked. Remove from the skillet and set aside.
  3. In the same skillet, add the chopped onion and minced garlic. Cook for 2 to 3 minutes until softened and fragrant.
  4. Add the rice and stir continuously for 1 to 2 minutes to lightly toast it.
  5. Pour in the beef broth and season with cumin, chili powder, salt, and black pepper. Stir well.
  6. Reduce the heat to low, cover the skillet, and simmer for 15 to 20 minutes until the rice is tender and cooked through.
  7. Once the rice is cooked, stir in the queso blanco and sour cream until smooth and creamy.
  8. Return the cooked steak to the skillet and gently fold it into the cheesy rice mixture.
  9. Cook for another 2 to 3 minutes until everything is heated through.
  10. Garnish with chopped cilantro and your favorite toppings before serving hot.
