A light and refreshing Strawberry Bellini made with fresh strawberries and sparkling wine for an elegant brunch or celebration drink.

Ingredients

  • 3 cups fresh strawberries, hulled and sliced
  • 1/4 cup confectioners’ sugar
  • 1 1/2 cups chilled sparkling wine or prosecco
  • 3 whole large strawberries for garnish

Instructions

  1. Rinse the strawberries thoroughly under cold water. Remove the tops and slice into smaller pieces.
  2. Add the sliced strawberries and confectioners’ sugar to a blender.
  3. Blend until completely smooth and creamy.
  4. Refrigerate the strawberry puree for about 10 minutes to chill.
  5. Divide the puree evenly between three champagne flutes.
  6. Slowly pour 1/2 cup chilled sparkling wine into each glass.
  7. Stir gently until combined.
  8. Garnish each glass with a whole strawberry on the rim.
  9. Serve immediately while cold and bubbly.
