Instructions
- Place mashed potatoes in a large bowl and allow them to come to room temperature if cold.
- Add salt and mix gently until combined.
- Gradually add flour, starting with 1 1/2 cups, mixing until a soft dough forms.
- Add more flour as needed until the dough is soft and manageable but not stiff.
- Transfer dough to a lightly floured surface and gently bring it together without overworking.
- Shape into a round about 1 inch thick and cut into four wedges.
- Heat a skillet over medium heat and lightly grease with butter or oil.
- Cook wedges for 3–4 minutes per side until golden brown and cooked through.
- Remove and serve warm.
