Ingredients
- 1 ripe avocado, mashed
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- 4 slices bread (white, whole wheat, or sourdough)
- 2 tablespoons butter, softened
- 4 slices cheese (cheddar, mozzarella, or preferred)
- 1 medium tomato, sliced
Instructions
- In a bowl, mash avocado until slightly chunky. Mix in lemon juice and salt.
- Lay bread slices flat and spread butter on one side of each slice.
- Flip slices and spread avocado mixture on two slices.
- Place a slice of cheese on top of the avocado, add tomato slices, then another slice of cheese.
- Top with remaining bread slices, buttered side facing outward.
- Heat a skillet over medium heat.
- Cook sandwiches for 3–4 minutes per side until golden brown and cheese melts.
- Press gently with a spatula for even toasting.
- Remove, rest briefly, slice, and serve warm.
