A soft and airy Eastern European pastry filled with a lightly sweetened creamy cheese center and topped with fruit, offering a comforting and elegant homemade treat.

Ingredients

  • 2 cups (250 g) spelt or all-purpose flour
  • 1 teaspoon instant yeast or 3 teaspoons fresh yeast
  • 1/2 cup (120 ml) milk or nut milk
  • 1/4 cup (45 g) demerara sugar, divided
  • 3 tablespoons butter or coconut oil
  • 1 egg yolk
  • 10 oz (300 g) farmer’s cheese or quark
  • 1 egg
  • 1 tablespoon vanilla extract
  • 3 tablespoons honey
  • 8 tablespoons berries (cranberries, lingonberries, or others)

Instructions

  1. Sift flour into a bowl and create a well in the center.
  2. Mix yeast with warm milk and 1 tablespoon sugar, then pour into the well and let sit for 10 minutes until bubbly.
  3. Add remaining sugar, butter, and egg yolk, then knead into a smooth dough.
  4. Cover and let rise for about 30 minutes until doubled in size.
  5. Mix farmer’s cheese, egg, honey, and vanilla until smooth.
  6. Divide dough into 8 portions, shape into balls, then flatten into circles.
  7. Form a shallow well in each and place on a lined baking sheet.
  8. Add cheese filling and top with berries.
  9. Bake at 200°C (390°F) for 15–20 minutes until golden.
  10. Cool slightly before serving.

  • Ensure milk is warm, not hot, to activate yeast properly.
  • Do not overfill to prevent spilling.
  • Allow dough to rise fully for best texture.
