Ingredients
- 2 cups (250 g) spelt or all-purpose flour
- 1 teaspoon instant yeast or 3 teaspoons fresh yeast
- 1/2 cup (120 ml) milk or nut milk
- 1/4 cup (45 g) demerara sugar, divided
- 3 tablespoons butter or coconut oil
- 1 egg yolk
- 10 oz (300 g) farmer’s cheese or quark
- 1 egg
- 1 tablespoon vanilla extract
- 3 tablespoons honey
- 8 tablespoons berries (cranberries, lingonberries, or others)
Instructions
- Sift flour into a bowl and create a well in the center.
- Mix yeast with warm milk and 1 tablespoon sugar, then pour into the well and let sit for 10 minutes until bubbly.
- Add remaining sugar, butter, and egg yolk, then knead into a smooth dough.
- Cover and let rise for about 30 minutes until doubled in size.
- Mix farmer’s cheese, egg, honey, and vanilla until smooth.
- Divide dough into 8 portions, shape into balls, then flatten into circles.
- Form a shallow well in each and place on a lined baking sheet.
- Add cheese filling and top with berries.
- Bake at 200°C (390°F) for 15–20 minutes until golden.
- Cool slightly before serving.

- Ensure milk is warm, not hot, to activate yeast properly.
- Do not overfill to prevent spilling.
- Allow dough to rise fully for best texture.
