Instructions
- Mix almond flour, shredded coconut, coconut oil, and sweetener until crumbly.
- Press mixture into a lined pan and chill for 20–30 minutes.
- Blend kiwi, lime juice, and zest until smooth.
- Beat cream cheese until smooth, then mix in sweetener and vanilla.
- Whip cream until soft peaks form and fold into cream cheese mixture.
- Dissolve gelatin in warm water, then heat slightly until smooth.
- Mix gelatin into kiwi mixture.
- Fold kiwi mixture into cream cheese mixture until combined.
- Pour filling over crust and spread evenly.
- Chill for 3–4 hours until set.
- Slice into bars and serve chilled.
